The first sip hits the back of the jaw. Crushed ice pushes the sharp carbonation and bitter cinnamon forward, then pulls back before the second. For the moment, something needed to snap.
Ice Fact Drop
Crushed ice disperses carbonation 3× faster than a solid cube, front-loading the bite of the citrus peels and bitters. The rapid dilution requires a 1.5× concentration of the heavy coconut sugar syrup, ensuring the intensity hits its maximum peak at exactly 45 seconds before softening.
Forty-five seconds. Then it lets go.
Why This Ice
Crushed ice provides a massive, porous surface area that immediately interacts with the dense coconut sugar syrup, forcefully separating the aromatic vanilla from the sharp botanical bitters. The rapid dilution rate requires a heavy flavor concentration, ensuring the spice profile hits its absolute peak exactly as the glass is picked up.
Forty-five seconds is the window. It is an intentional constraint. You do not hold onto this drink; you feel the cold texture on your tongue, experience the release, and let it go.
Ingredients
- 45 ml Botanical Cola Syrup (coconut sugar, cinnamon, orange peel, lime peel, vanilla, bitters)
- 90 ml highly carbonated sparkling water (chilled)
- 3 drops 2% saline solution
- 1 fresh lemon wheel
- Crushed ice
Ingredient Swap
- Original: Standard aromatic bitters
- Swap: Orange bitters
- Difference: Standard bitters anchor the deep cola spice against the rapid melt; orange bitters pull the citrus peel notes forward for a sharper, higher-frequency bite on the tongue.
Method
Simmer. Infuse. Stir.
Combine 1 cup coconut sugar, 1/2 cup water, cinnamon sticks, and citrus peels in a pan over heat. Stir exclusively with a wooden spoon so the sugar does not stick, then remove to cool before integrating 1 teaspoon of vanilla and 1/2 teaspoon of bitters.
Pour. Sparkle. Salt.
Add the heavy 45 ml of cola syrup directly to the base of the glass. Pour exactly 30 ml of sparkling water first to integrate the thick syrup without losing the fizz, then drop in the saline solution.
Fill. Cap. Serve.
Fill the glass aggressively with crushed ice. Pour the remaining 60 ml of sparkling water gently down the inside wall of the glass, lay the lemon wheel on top, and serve within 60 seconds.
