Restorative Black Sesame Soy — Reset

Ingredients

  • 1.2 cups fresh soy milk
  • 2 Tbsp black sesame paste
  • 1 tsp rock sugar
  • 1 pinch black sesame seeds

  • Original: Fresh soy milk
  • Swap: Oat milk
    • Difference: Oat milk brings a heavier, silkier mouthfeel, while fresh soy milk maintains a sharper mineral snap against the clear ice.

Method

Step 1 — Toast. Cool. Blend.

Toast 1 cup of black sesame seeds on low heat for 3 minutes to activate the essential oils. Cool fully, then blend into a paste with honey and warm water until gelatinous.

Step 2 — Brew. Pour. Stir.

Brew 400ml water with 2/3 cup rinsed soybeans for 30 minutes in a soy milk machine. Pour 1.2 cups of the warm milk over rock sugar to dissolve.

Step 3 — Mix. Pour. Garnish.

Stir 2 tablespoons of black sesame paste into the soy milk until fully integrated. Pour over a clear ice block in your glass and top with a pinch of sesame seeds.
